When you place an order for rice from India, the variety - 1121, 1509, Sugandha, IR 64 - is only half the specification. The other half is the processing form: Raw, Steam, White Sella, or Golden Sella. These are not just names - they represent fundamentally different products with different appearances, textures, shelf lives, and market preferences.

Get the processing form wrong for your market and you will have dissatisfied buyers regardless of how good the variety is. This guide explains each form clearly, so you always specify the right one.

Why Processing Form Matters

Rice goes through several stages after harvest: paddy is threshed, dried, and then milled. The milling process - and what happens before and during it - determines the processing form. Each method changes the grain's physical structure in different ways, which in turn affects everything from colour and cooking behaviour to shelf life and market suitability.

The same variety - say, 1121 Basmati - will look, cook, and sell very differently depending on whether it is Raw, Steam, White Sella, or Golden Sella. Understanding these differences is fundamental to sourcing the right product for your buyers.

The Four Processing Forms

Raw Rice

Unmilled · Unparboiled · Most Natural Form

Raw rice - sometimes called "Raw White" or simply "White Rice" - is paddy that has been husked and milled without any heat treatment. The bran and germ are removed during milling, leaving a white, polished grain. No soaking, no steaming, no parboiling - just straightforward milling.

  • Aroma: Strongest fragrance - no heat processing means the volatile aromatic compounds are fully preserved
  • Cooked texture: Soft, slightly sticky, fluffy - grains are tender and separate well when cooked correctly

Steam Rice

Steam Treated · White Grain · Premium Retail

Steam rice is milled white rice that is briefly exposed to steam after milling. This gentle heat treatment partially gelatinises the outer surface of the grain without changing its white colour. The result is a grain that is more stable during cooking, retains its elongation better, and has improved separation - while still appearing white and preserving most of the variety's natural aroma.

  • Appearance: White, clean, slightly more translucent than raw - visually the most appealing of the four forms
  • Aroma: Strong - the steam process is gentle enough to preserve most of the fragrance
  • Cooked texture: Soft yet stable - grains elongate well and separate cleanly. Less risk of overcooking to mush compared to raw
  • Shelf life: Slightly longer than raw - typically 12 months
  • Cooking time: 15–18 minutes
  • Best markets: Europe, North America, premium Asian retail - anywhere that values white grain appearance combined with strong aroma

White Sella (Parboiled)

Parboiled · Firm Grain · Long Shelf Life

Sella rice is produced through parboiling - the paddy is soaked in water, steamed under pressure, and then dried before milling. This process drives nutrients from the bran into the grain's core and causes the starch to gelatinise fully. The result is a fundamentally different grain - harder, more translucent when raw, firmer when cooked, and significantly more shelf-stable. White Sella is polished after parboiling, giving it a white appearance.

  • Appearance: White, semi-translucent, harder-looking than raw - noticeably different from raw white rice
  • Aroma: Mild - the parboiling process reduces the fragrance considerably compared to Raw and Steam
  • Cooked texture: Firm, separate, non-sticky - each grain stays distinct even when slightly overcooked. Ideal for biryani and pilaf
  • Shelf life: Long - typically 18–24 months. Survives difficult storage conditions better than any other form

Golden Sella (Parboiled)

Golden Sella is produced through the same parboiling process as White Sella - but with less polishing after milling. This reduced polishing leaves a layer of the bran pigment on the grain, giving it a distinctive golden or amber colour. The cooking properties are essentially identical to White Sella, but the colour commands a specific market preference - particularly in the Gulf, where the golden hue is strongly associated with premium quality and is actively preferred by buyers.

  • Appearance: Golden to amber in colour - visually distinct and immediately recognisable
  • Aroma: Mild - similar to White Sella, slightly richer due to retained bran layer

Which Form Is Right for Your Market?

If your buyers want the most authentic, aromatic rice experience

Choose Raw. It delivers the purest expression of the variety - full aroma, soft texture, quick cooking. It is the preferred form in premium diaspora retail, South Asian domestic markets, and restaurant trade. The trade-off is shorter shelf life and slightly more care needed in storage and handling.

If your buyers want white grain with strong aroma and reliable cooking

Choose Steam. It gives you the best of both worlds - white appearance that appeals to mainstream consumers, fragrance that satisfies Basmati buyers, and cooking stability that reduces the risk of buyer dissatisfaction. Steam has become the dominant form in European and North American premium retail for good reason.

If your supply chain is long or storage conditions are variable

Choose White Sella or Golden Sella. The parboiling process makes the grain significantly more robust - it survives months in port warehouses, temperature fluctuations, and high humidity far better than Raw or Steam. For African and Middle Eastern markets where supply chains can span weeks or months, Sella is often the only practical choice.

If your market is the Gulf specifically

Choose Golden Sella. The colour is not just tolerated in Gulf markets - it is actively preferred. Buyers in Saudi Arabia, UAE, Kuwait, and Iraq associate the amber colour with premium quality. Offering White Sella where Golden Sella is expected is a real commercial disadvantage.

A Note on Non-Basmati Processing Forms

Everything above applies equally to non-Basmati varieties - Sugandha, Sharbati, IR 64, PR 11, PR 14, and Parmal are all available in Raw, Steam, Sella, and Golden Sella forms. The market preferences follow the same logic: African and Middle Eastern wholesale buyers tend toward Sella; South Asian and diaspora retail leans toward Raw or Steam; Gulf buyers prefer Golden Sella where available.
